We are currently going through an alarming amount of Bananas at the moment...
Don’t smirk like a 14yr old boy when reading this, You’re better than that!
Just for a little context and a little tip to avoid throwing food away!; When we have a few Bananas that have really turned black and started to take that very ripe texture, I peel them and freeze them. Which does give you plenty of functionality for smoothies, baking and other sweet treats and eventually baby food, no doubt.
This recipe has the added benefit of being Vegan – whilst this was not the initial premise but seeing as I suffer from a Dairy Intolerance it meant that it was something for me to enjoy at the same time!
These cookies measure up to lots of homemade cookies I have enjoyed and with an enjoyable balance of sweetness that comes in most from the ripe Bananas (Only 30g of unrefined Sugar added) certainly gave TBH her sweet tooth fix in the first weeks but not too much Sugar that she felt unwilling to enjoy one on the morning commute to work.
These are not ‘Healthy Cookies’ but neither are they ‘Unhealthy Cookies’ – they are simply to be enjoyed as a cure of sorts.
It is an altered approach to baking that makes for a great accompaniment to a Cup of Tea or Coffee (albeit it Decaf) and whilst TBH’s nausea was not as pronounce as some people’s the need for carbohydrate rich food help curb the effects of the raging hormones that cause morning sickness. As you can see in the link the naturally occurring Potassium in Bananas can really help with morning sickness or as in the case of TBH, sickness at any time of the day.

Cookies (Makes 24)
175g Banana (needs to be super ripe, black on outside) 60g Coconut Oil (melted) 75g Sugar Free Crunchy Peanut Butter (e.g. WholeEarth or Manilife or Meridian) 15g Flaxseed Milled / 45g Warm Water (mixed together)
3g Ground Cinnamon 2g Salt
50g Rolled Oats 25g Wholemeal Flour 50g Self-Raising Flour 30g Unrefined Caster Sugar
Handful of Raw or Salted Peanuts
Mash the Banana’s into a paste – smoother the better, this will take longer if it is frozen…
Mix all the wet ingredients together – Banana, Flax & Water, Coconut Oil & Peanut Butter, this will resemble a thick pancake batter.
Add the dry ingredients mix well – should form a sticky cookie batter.
Use a spoon to lay out the mix and press down in the middle of the batter with back of spoon. So they sit low to the pan with a small shallow well in the mix.
Push the peanuts into the cookie well, otherwise they won’t stick
Bake at 175 until golden brown – 12 minutes should give you the desired effect.
Eat almost immediately…
FYI - You can then drizzle or dip them in melted dark chocolate, if you want to be a bad ass and turn them up to 11. Your choice, no judgement either way!
